Chios Mastiha Cleaning
"Pastrema"

Using sharp knives each Chios Mastiha grain is cleaned of foreign matter stuck on the Chios Mastiha. This process called “Pastrema”.

As it is a tiring and monotonous job, it is done in groups of women, so-called “danikes”.

Every woman brings her friends to help her and then repays.

They usually work three or four hours, from November to Spring.
