From March to May the soil around the stem is cleaned for the renewal and removal of any weeds.

From June to July the ground around the stem needs to be free from other plants, stones, sods and woods.

Special tools such as an ancient harvester “amia”, shovels and trowels are used in this process.

The cleaning work is done in a “circular” area and is called “tables creating”.
