From June to July the ground covering with well-sifted white soil which is pressed to the ground in order to create a smooth surface.

The drops of Chios Mastiha on the white soil get brilliance, solidification and can be gathered more easily.

The white soil, consists of calcium carbonate (CaCo3), is an inert material and does not affect the physical and chemical properties of mastiha or its purity.

Generally, the more meticulously the “table”, the more clear Chios Mastiha will be gathered.
